Blend: 100% Sangiovese Grosso.
Harvest: grapes strictly selected and harvested by hand.
Vinification: in purity at controlled temperature for 21 days.
Color: deep ruby red.
Bouquet: fresh with strong hints of spices and berries.
Flavor: prolonged persistence, very important structure with noble tannins.
Ripening: 30 months (minimum 24 months) after an accurate fermentation and at controlled temperature, matures in oak barrels of Slavonia and Allier of 25 and 32 Hl.
Aging in the bottle: not less than 8 months to give the wine indispensable complexity and pleasantness.
Storage: store in a cold place (16°C constant with 80% humidity) and in the dark; keep the bottles stretched horizontally.
Preparation, uncorking and oxygenation: the bottle must be set up and brought to a temperature of 18-20°C at least a couple of hours in advance of the service. To pull out the cap, use a screw corkscrew of the sucking type. The cap should not be drilled completely to prevent traces of cork from falling into the wine. To oxygenate the wine the bottle must be uncorked 2-3 hours before tasting; if you want to use the decanter the wine must be slowly poured into a single action.
Tasting temperature: 18-20°C
Pairing on the table: roasts, grilled red meat, game, aged cheeses. With truffles it finds a perfect combination, as well as with mushroom dishes.
Quantity: a small amount is enough to fully enjoy its characters. In principle, a bottle is used for 8 -10 people.
Gradation: 13 degrees
Ideal glass: Brunello di Montalcino should be served in crystal glasses with a wide shape, waisted, called wide tulip, in order to grasp its composite and harmonious bouquet.
